Grandma's Peanut Butter Fingers {GF, DF, EF & SF}

Grandma’s Peanut Butter Fingers (Vegan & Gluten Free)

 Ingredients:

Bar Ingredients:

  • 1 ½  cups gluten free oats (Trader Joe’s brand is great)
  • 1 teaspoon baking powder
  • ½  teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 2 overripe bananas mashed
  • ¼  cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ⅛  cup pure maple syrup
  • 1 flax egg (1 tablespoon ground flaxseed meal + 3 tablespoons water)
  • ¾  cup unsweetened vanilla almond milk

For Topping:

  • 1/4 cup vegan chocolate chips (Enjoy Life or Guittard)
  • 1/4 cup peanut butter
  • 1/4 cup powdered sugar
  • 2 tablespoons almond milk (any milk substitute will do)

Preparation:

  1. Preheat oven to 350 degrees F. Grease a 9x9” square baking pan and set aside.
  2. In a small bowl mix together the oats, baking powder, sea salt and ground cinnamon. Set aside.
  3. In a large bowl mix mashed banana and peanut butter together until combined.
  4. Add in the vanilla extract, maple syrup and flaxegg. Mix until combined.
  5. Add the almond milk and stir until batter is homogenous.
  6. Add dry ingredients to wet ingredients and mix thoroughly.
  7. Pour the mixture into a lightly greased 9x9” baking pan.
  8. Bake at 350 degrees for 25 minutes. Or until the top slightly springs back when touchedand the edges are just barely brown!
  9. When you take it out of the oven pour ¼ cup vegan chocolate chip on top, let melt for 5 minutes.
  10. Mix together peanut butter, powdered sugar and almond milk for topping. Stir well, then spread on top of melted chocolate chips.
  11. Let cool for 5-10 minutes, cut into squares and enjoy!
