Famous Sunday Pancakes {GF, DF, EF & SF}

I love having recipes on hand that are friendly for our family full of allergens, and pancakes was one of the first things I missed and had to figure out how to make without GLUTEN, DAIRY, EGG and SOY! Here's my finished product, be sure to let me know how you like them.

Ingredients

  • 1 cup all purpose gluten-free flour blend (Namaste is my favorite)
  • 2 tbsp organic sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 pinch of himalayan pink sea salt
  • 2 tsp pure vanilla
  • 1 2/3 cup coconut milk
  • 1/4 cup applesauce

Directions:

  1. In a large bowl, mix first 5 ingredients together.
  2. In a medium bowl, whisk vanilla, milk and applesauce, then add flour mixture. Wisk until blended; a few lumps are fine.
  3. Heat non stick skillet to medium heat.
  4. Pour 2 tbsp batter for each pancake, be sure to leave room for flipping. When the batter starts to have large bubbles, flip and cook until medium golden brown. Keep warm until ready to serve.
  5. Top with maple syrup and soy-free earth balance and enjoy.
  6. Optional Add-Ins:  Fresh blueberries or dairy free chocolate chips (Enjoy Life or Guittard).
