Waffles {GF, DF, EF & SF}

Ingredients:

  • 1 ¼ cup coconut milk
  • 1 tsp apple cider vinegar
  • ¼ cup melted coconut oil
  • ¼ cup agave or real maple syrup
  • 1 ¾ cup gluten-free flour blend (Namaste is my fave)
  • ½ cup gluten-free rolled oat (Trader Joe’s is my go-to)
  • 1 ½ tsp baking powder
  • Pinch of sea salt

Instructions:

  1. Combine milk and vinegar, let curdle

  2. Add coconut oil, agave/maple syrup then set liquid aside

  3. Combine gluten-free flour, gf oats, baking powder and sea salt. Mix well.

  4. Stir dry mix slowly into wet mixture until well combined, most of the bumps gone.

  5. Pour ½ cup batter onto heated waffle iron. I set to medium heat and cook for 4-5 minutes or until golden brown.

Yields 5-6 waffles, but they are filling. Our fave topping is nut butter and maple syrup.
